Tuna Stuffed Avocado
Aguacate Relleno de Atún
Stuffed avocados are an extremely popular appetizer in Colombia and elsewhere in South America. There are plenty of options for variation with this recipe, so feel free to mix-and-match as you see fit. Try with chicken, sautéd vegetables, salsa, cheese, or whatever you like! Enjoy.
INGREDIENTS
- 2 cans albacore tuna
- 1/4 cup finely grated white onion
- 2 tablespoon finely chopped red onion
- 1/2 cup prepared, rinsed black beans
- 1/4 cup cooked and minced carrots
- 1/2 cup salsa
- 1/3 cup mayonnaise
- 1/4 teaspoon hot sauce
- 2 tablespoons chopped parsley
- 2 tablespoons chopped cilantro
- 6 ripe but firm large avocados
- Juice of 2 limes
- Salt and white pepper to taste
INSTRUCTIONS
Ok, this is complicated so make sure you follow the instructions precisely. Set aside the avocados and half of the lime juice, then combine all of the remaining ingredients in a medium sized mixing bowl and stir. Hmmm, I guess that wasn’t so hard at all! I love easy recipes.
Cut the avocados lengthwise, remove the pit, and drizzle them with lime juice to prevent turning color. Fill the avocados with your prepared mixture and enjoy.

An interesting water plant called macarenia clavigera is the reason for this beautiful display of color.
