Scottish “Tattie” Soup
This simple, traditional potato soup (or Tattie if you speak like a local) is healthy and delicious, and makes for a perfect recipe on a cold winter night. Feel free to modify as you see fit, it’s a versatile recipe.
INGREDIENTS
- 2 leeks, discard the green tops
- 4 carrots, chopped
- 1 small turnip, chopped
- 6 large potatoes, cubed
- 6 cups of chicken broth or vegetable broth
- 1/2 tablespoon salt, to taste
INSTRUCTIONS
Chop the leeks, carrots, turnip and add them to a medium sized soup pot. Cube the potatoes and add to the pot, pour the chicken or vegetable broth .
Bring the ingredients to a boil, then add salt and lower the heat; simmer for 60 minutes. Add hot water if too much liquid evaporates, and stir occasionally to prevent ingredients sticking to the bottom of the pot. When ready to serve add salt and pepper to taste. Enjoy
