Zimbabwe Nhopi Porridge

I would have never thought of combining peanut butter and butternut squash, but the end result is to die for! Versions of this dish found their way to the Americas and beyond, but it is believed to have originated in Zimbabwe where it is enjoyed to this day.


  • 1 butternut squash
  • 1/4 cup creamy peanut butter
  • warm water, to thin as needed
  • salt or sugar to taste


Peel, cube and steam butternut squash for about 30 minutes. Make sure the cubes are very soft, otherwise you will end up with lumpy porridge.

Mash the peanut butter into the butternut squash; add salt or sugar depending upon your preference. Measure to taste. If this mixture is too thick, use an immersion blender and a little hot water to thin it out.

This recipe is truly delicious, as well as very forgiving. You can modify the texture, flavor and consistency however you see fit. The balance of salt vs sugar allows you to enjoy this as a sweet or savory dish.
