Hungarian Fruit Soup

Fruit soup is a tasty treat that is served cold during the summer months in many countries, but Hungarians enjoy their soup served hot. Hot fruit soup is one of those things that doesn’t sound too appealing at first, but I guarantee you’ll like it if you try it.

INGREDIENTS

  • 1 teaspoon vanilla extract
  • 1 cinnamon stick
  • 2-3 whole cloves
  • several sprigs of thyme, bundled
  • 1/4 teaspoon salt
  • juice and zest of 1 lemon
  • 1/2 cup sugar
  • 1 Tablespoon cornstarch
  • 3 apples, peeled and diced
  • 1 lb cherries
  • 3 cups water
  • 1 cup almond or rice milk

INSTRUCTIONS

Put fruit, water, and salt in a medium size pot and bring to boil. Add lemon juice, zest, cinnamon stick, cloves, bundle of thyme, vanilla, and sugar. Lower heat and simmer for 15 minutes, stirring occasionally.


Ladle some of the hot liquid into a small bowl and whisk while adding the cornstarch. Ensure no lumps remain in the mixture, pour into the pot along with the almond milk and stir. Remove the cinnamon sticks and bundle of thyme. Use an immersion blender to make the soup a smooth consistency, or leave the chunks of fruit if you like. Dish up in a soup bowl and enjoy your hot soup!
