Brazilian Rice

Thank goodness, not every recipe has to be complicated! Sometimes our favorite classics are quick and easy to prepare like this traditional Brazilian rice. I love the simple flavor of this rice, and serve it often alongside my favorite chicken and seafood main dishes.

Feel free to use mix and match any of the following ingredients to create your picada experience.

INGREDIENTS

  • 3 tablespoons olive oil
  • 1/2 white onion, diced
  • 3 cloves garlic, minced
  • 1½ cups rice
  • 3 cups water
  • 6 sprigs fresh cilantro, finely chopped
  • 1½ teaspoons salt
  • 1 teaspoon lemon juice

INSTRUCTIONS

Heat oil in a medium saucepan over medium-low heat. Add garlic and onion; cook and stir until the onion becomes soft translucent, about 5-7 minutes. Add rice to the saucepan and stir until the oil and onion mixture is well distributed.


Stir water, cilantro, salt, and lemon juice into the saucepan and simmer just below boiling, uncovered until most of the water has been absorbed – about 10 minutes. This may seem different from how you normally cook rice, but just trust me on this! . Reduce heat to low, cover, and cook until rice is tender, an additional 10 minutes or so.
